Guess who’s coming to dinner?! KALE!!

my favorite dinosaur: dino kale
this recipe is amazing. i always substitute things; no need to follow it to a “t,” it’ll still turn out great.
UDON WITH SHIITAKE MUSHROOMS AND KALE IN MISO BROTH
time: 35 minutes; serves: 4
1/2 pound udon noodles
2 tbsp oil
1 med onion, sliced into half moons
4 ounces mushrooms, sliced
3 cloves garlic, minced
2 tsp ginger, minced
2 cups water
3 tbsp miso*
4 cups kale, chopped
2 tsp soy sauce
Cook the udon noodles and cool.
Saute onion and mushroom in pan until soft (5-7 minutes). Add garlic and ginger, and saute for another minute.
Add water and miso, and bring to a boil. Lower heat.
Simmer and add the kale.
When kale wilts, add the noodles and stir mixture for a couple of minutes.
