Amber’s Sweet Potato Ginger Hash

Put one Tablespoon of coconut oil in a skillet.
Shred a sweet potato.
Finely shred about a teaspoon of fresh ginger, or to taste.
Cover Skillet and cook on Med/low heat.
To add a bit more pep, you might like to add a bit of black pepper!
